Chocolate Granola



Ingredients:

- 1 Cup Oats

- ½ cup Pepita Seeds

- ½ cup Sunflower seeds

- 1 cup Hazelnuts – chopped

- ½ cup Pecans – chopped

- ½ cup Shredded Coconut

- ½ cup Almonds – chopped

- 1 tsp Cinnamon

- 1 Tbsp Cashew Butter (or any nut butter)

- 3 Tbsp Maple Syrup

- 1 Tbsp Coconut Sugar (optional)

- 2 Tbsp Extra Virgin Olive Oil

- 3 Tsp Cacao Powder



Method:

1. Preheat oven to 180 degrees celsius

2. Line a tray with baking paper and set aside

3. In a large mixing bowl add the oats, pepita seeds, sunflower seeds, hazelnuts, pecans, shredded coconut, almonds, and cinnamon.

4. Mix until combined

5. In a small bowl add the cashew butter, maple syrup, coconut sugar, olive oil and cacao powder and stir until well combined and there are no lumps. (It still will be a little bit ‘grainy’ from the coconut sugar if added, but not lumpy.

6. Add wet mixture into the dry mixture and stir to coat all the ingredients well.

7. Pour onto the lined baking tray.

8. Place into the oven and cook for around 15-10 minutes, checking on it every 5 minutes or so and stirring the granola around on the tray so the nuts don’t catch and burn.

9. Once golden remove from the oven.

10. You can serve it hot with greek yoghurt and a drizzle of maple syrup and fruit like berries. Another great option is cooked pears in cinnamon and maple syrup and added on top.


*Granola will keep in an airtight container in the cupboard for up to 1 week.
