Chai Spiced Apple & Date Cake


INGREDIENTS

2 Large Red Apples, grated

12 Medjool Dates, roughly chopped

1 tsp Bi-Carb Soda

1/2 Cup Boiling Water

3/4 Cup Olive Oil

1/2 Cup Pure Maple Syrup

1 Tbsp Vanilla Extract

1 Egg

1 3/4 Cups Plain Flour

PInch Salt

1 Tbsp Chai Spice, and 1 Tsp to sprinkle on top

1 Tsp Coconut Sugar


METHOD

1. Preheat oven to 180°C

2. Line a loaf tin with greaseproof paper.

3. Combine the apples, chopped dates, bi-carb soda, and boiling water in a bowl then set aside for 5 minutes

4. Whisk together the olive oil, maple syrup, egg, and vanilla.

5. Then add the date and apple mixture and fold through.

6. Gently add and fold through the flour, salt & Chai Spice

7. Pour the mixture into the prepared loaf tin and sprinkle over extra Chai Spice & Coconut Sugar

8. Bake for 40-45 minutes or until a skewer comes out clean

9. Once the cake is cooked, allow to cool for 10 minutes in the loaf tin before turning onto a wire rack to cool completely.
